The first generation Shichibei was taught how to make these beans by a Zen monk; The name comes from the fact that the shape of the beans resembles the shape of one’s legs when doing zazen, a type of meditation pose. At that time, the soup of zazen beans boiled with sugar and soy sauce was highly valued as it was said to improve your voice. So, it was drunk by the geisha before their performance, which were then very abundant in Shinbashi.

Shinbashi Tamakiya A History that Started in 1782 during the Edo Period.
Shichibei of Tamaki Village, commonly known as Echigo Province, established a small shop in Edo Katagawa-cho (present-day Shinbashi) and named it Tamaki-ya, after the name of his hometown in 1782.
At this time, it was known for the family's traditional “zazen beans.” As time progressed, Shichibei’s, the third-generation descendant got an idea from how the fisherman of the Tsukudajima boiled and sold small fish. Then he created zazen beans that had a unique flavor. He also created Tsukudani.
“Tsukudani” is a rice condiment. Along with zazen beans, these were a favorite of the sophisticated connoisseurs of Edo culture which was flourishing at the time; it spread to every corner.
